Fig Vincotto is a very versatile vinegar. Calogiuri Fig Vincotto, is crafted by adding figs after a few years of aging. It can be used as a condiment over roasted meats, carpaccio, grilled fish, soups, cheese, and fruit salads. Try it also over hot pasta, toasted walnuts, roasted lamb served with couscous, in a Kale salad, and vanilla ice cream. Excellent!
Vincotto (translated as "cooked wine"), is a dark, sweet, thick syrup produced by people in the countryside, mainly in the Emilia Romagna, Veneto, Lombardy, Apulia, and Marche regions of Italy. A sister of Balsamic without the woody tone, and with a fruity, spicy finish, it is perfect to finish game, roasted meats, salads, aged cheeses and certain desserts. Vincotto originale, is made from the cooked 'non fermented must' of the Negroamaro and Malvasia grapes, and it is a favorite secret ingredient of chefs !

Full-bodied and velvety sweet, balsamic vinegar is a beloved product of Modena, where its legacy began centuries ago. This traditional balsamic is taken from Modena grape must; after being boiled over an open flame, the must is placed in wooden casks. The vinegar is then repeatedly transferred to smaller and smaller containers with sensitive adjustments to its contents, using extremely meticulous refining methods. The casks are stored in a vinegar loft (acetaia) - where for twelve years, the balsamic vinegar continues to grow more complex. Fabulous on fresh, grilled, steamed, or boiled vegetables- also adds a refined flavor to fish and meat dishes . Absolutely wonderful on cheese, particularly parmigiano reggiano!
